Having spent the last 11 years in Thailand and Hong Kong my wife, a Thai national, and I decided to return to live in the UK. We both immediately missed the availability of good authentic Thai food.
Also, my wife and I thought that most of the available Thai food had become a little too westernised and therefore lost of some the flavours that make ‘a Thai’ such a great meal.
